Heirloom tomato salad & sunny side up egg with parmesan!

It almost feels like the weather is starting to change, but please don’t give up trying all the deliciousness off the season. Go and explore the farmers market and make one of this beautiful salad with heirloom tomatoes that I made for my self this morning.


What to you need?
1 tomato
A bunch of any greenS
½ lime
A drizzle of Olive oil
Salt
When I’m making a salad for my self, I try not to go to complicated with the dressings. Since is the morning I just wanted to keep it simple and fresh as possible; always respecting the nature of my beautiful veggies.

In a little bowl put the tomatoes with the greens. Sprinkle some salt and pepper. Add a drizzle of olive oil and squeeze a lime juice. It is just heaven to taste something so good and so simple!

For the sandwich
2 slice of bread. I choose the raisins and walnuts from whole foods cause I’m in love with this bread
1 sunny side up egg
2 slices of the heirloom tomatoes used in the salad
Parmesan cheese
3 ramps
olive oil 
It is more than an easy preparation. Cook the egg in olive oil. In another sauté pan, at med heat add a little olive oil and sweat the ramps and the 2 slices of tomatoes. Once done built your sandwich and sprinkle some parmesan cheese on it. If you like, you can always add a little butter to the bread and toast them. Mmmm delicious way to start your day!
